Introducing Saltrose: Tofino’s New Beachside Dining Experience
This weekend, Pacific Sands officially welcomes guests to Saltrose, a new beachside restaurant overlooking Cox Bay and just steps from your suite. Created by the team behind Beach Shack Café and Taste of Tofino Catering, Saltrose blends wood-fired coastal comfort food, welcoming hospitality, and a laid-back atmosphere inspired by some of the world’s most beloved beach clubs.

For Pacific Sands, the opening represents more than a new restaurant. It’s a gathering place where great food, meaningful connection, and epic moments come together steps from Cox Bay, one of Tofino’s most iconic beaches.
“Saltrose reflects exactly how we want people to feel when they’re here,” says Sabrina Donovan, General Manager of Pacific Sands Beach Resort. “Relaxed, connected, and cared for. It adds another layer to the Pacific Sands experience, where great food, time together, and those small, joyful moments are part of every stay.”

Built for Beach Days
At Saltrose, arriving straight from the beach isn’t just acceptable, it’s encouraged. The spacious, pet-friendly patio was designed with beach life in mind. Think sandy feet, salty hair, sleepy dogs under the table, and kids still buzzing from a day in the waves.
Inspired by Australian surf clubs, guests order at the counter before settling in to enjoy open-air tables and cozy fire pits. The experience is intentionally casual while still delivering the quality food and hospitality the team has become known for.
That philosophy comes from co-creators Ronnie Lee, Raphael Ouellet, and Emily D’Alessio, who envisioned Saltrose as a place where elevated food and relaxed beach culture naturally come together.
“We wanted to create a place people could walk into and feel comfortable right away,” says Ronnie. “You can arrive in flip-flops, order a great meal, and kick back while the kids are happy and busy. Parents get a proper drink and awesome food, and no one feels out of place.”
“Exactly,” chimes in Emily. “Come as you are off the beach to enjoy oysters and a great bottle of wine. You can be wearing a wetsuit, we’re not going to judge.”
That feeling of ease sits at the heart of everything Saltrose hopes to create. Additional Saltrose updates are planned starting Fall 2026, including a covered area to expand the year-round experience.

Familiar Faces, A New Chapter
While Saltrose may be new, the team behind it will be familiar to many Pacific Sands guests.
Raphael, Ronnie, and Emily (pictured above) have spent years building a reputation for exceptional hospitality. From the former, much-loved Lil’ Ronnie’s Beachside BBQ to today’s Taste of Tofino Catering and the Beach Shack Cafe. Along the way, they’ve become known not only for great food but for creating experiences that bring people together.
Saltrose represents the next evolution of that partnership. A shared dining space where resort guests, local residents, and visitors can gather over great food and good company.
The team has also attracted a talented crew of hospitality professionals who share a passion for creating welcoming experiences. Their philosophy is simple: when staff genuinely enjoy what they’re doing, guests can feel it.

Even the name carries a story
Saltrose takes inspiration in part from the Nootka rose, a beautiful and resilient coastal flower that blooms along Vancouver Island’s shoreline each year from late spring through mid-summer.
Ironically, a Nootka rose shrub was flowering just outside the restaurant doors as the Saltrose team prepared for opening weekend. Whether coincidence or good timing, it felt like a fitting symbol for a restaurant rooted in place, community, and the rhythms of the coast.

Designed to Bring People Together
During our conversation with the team, one theme surfaced again and again: creating a place people don’t want to leave.
Of course, the food matters. But so do the conversations around the table, the soundtrack playing in the background, and the feeling guests take with them when they leave.
From curated playlists featuring timeless favourites to warm, welcoming service, every detail has been considered. The goal is to create a space where people naturally want to stay a little longer, order another round, and settle into the moment.
As Ronnie puts it, “Every restaurant in Tofino does great food. We’re focused on creating a great experience, too.”
It’s a philosophy that shapes every aspect of Saltrose.

Wood-Fired Coastal Comfort
“We wanted to bring together wood-fired cooking, coastal comfort food, and hospitality in a way that feels approachable but still special,” declares Raphael.
At the centre of the experience is a menu that reflects that approach.
Drawing inspiration from years in hospitality and memorable meals enjoyed while travelling, the team has created a menu that feels approachable while still offering plenty of surprises.

Guests can expect fresh seafood, seasonal vegetables, housemade pasta, and shareable plates designed for gathering. Heartier offerings include slow-smoked barbecue favourites such as confit beef cheek and a brisket burger, while dishes like mussels and frites, tuna tartare, and local greens bring a lighter touch.
Families remain an important part of the vision. Familiar favourites such as spaghettini and meatballs, and creamy mac and cheese, offer comforting options for younger diners while still reflecting the care and quality found throughout the menu.
The beverage program follows the same philosophy. Alongside wine, local beer, cider, and creative cocktails, guests will also find thoughtfully curated non-alcoholic options, including alcohol-free beer, wine, and handcrafted cocktails.

Creating the Moments People Remember
Ask the team what success looks like five years from now, and the answer isn’t a menu item. They’ll talk about a memory.
A family dinner after a day in the surf. A sunset shared on the patio. A chance meeting that turns into a friendship. The meal that perfectly capped off a Tofino getaway.
Ronnie speaks passionately about recreating the sense of connection and community that guests experienced at his previous ventures, creating a place that becomes meaningful in people’s lives long after their visit has ended.
Because while great food brings people through the door, it’s often the experience that stays with them.
